I’ve recently started a series of B.F.A. (Before Fashionably Ate) posts, which feature my favorite meals from trips past. Here is my second post of the series…
Last January, my family and I took a winter vacation to Beaver Creek, CO for some skiing and relaxation in the beautiful Rocky Mountains. We got in a few good days of skiing in town and in Vail, did a little touring, some shopping and pampering, and of course… ate, a lot. Here are some snapshots from our trip!
Every day after retiring from the slopes, I would make us a little après ski tray of assorted cheeses, baked bread, and fruit to enjoy with our wine and cocktails by the fire.
Another fun part of our trip was beer tasting at Crazy Mountain Brewery, a local brewery in Edwards, CO.
Now, back to food. Hands down, our best meal of the trip was at Mirabelle Restaurant. If you are ever in Beaver Creek or the surrounding area, I highly recommend making a reservation here for dinner one night. Mirabelle is set in a quaint cottage with a wonderful, warm and homely ambience, and the food prepared by Master Chef Daniel Joly is exquisite and unique. We thoroughly enjoyed our dining experience.
